  • 1 clove garlic (optional) Adds a pungent depth but can be skipped for a milder flavor.
  • 1/4 cup white vinegar Use good quality vinegar for best results.

Preparation
  1. Optional Step: Char the chilies and garlic (if using) in a dry skillet over high heat until they are lightly charred, about 2-3 minutes.
  2. Pound the chilies and garlic together into a paste using a mortar and pestle.
  3. Transfer the chili paste into a bowl, and add the white vinegar. Stir well to combine.
  4. For a smoother consistency, blend all ingredients together in a blender.
  5. Pour the mixture into a sealed container and store it in the fridge.

Notes

Taste as you go and adjust flavors. Always keep in the fridge. This sauce is a great make-ahead option as it only gets better with time.
