Ingredients
  

Fruit Ingredients
  • 2 cups fresh or frozen raspberries Look for ripe, juicy ones. If frozen, no need to thaw.
  • 2 cups fresh or frozen strawberries, hulled and chopped Choose vibrant, sweet strawberries for the best flavor.
Sweeteners and Thickening
  • 1 to 2 tablespoons maple syrup or honey Adjust this depending on your sweetness preference.
  • 2 tablespoons chia seeds Try organic for a fresher taste.
  • 1/2 teaspoon vanilla extract (optional) For a lovely warm note.
  • 1 teaspoon lemon juice (optional) Brightens flavor and balances sweetness.

Method
 

Cooking the Berries
  1. Place the berries in a small saucepan over medium heat. Stir occasionally and cook until the fruit breaks down and becomes syrupy, about 5 to 7 minutes.
Sweetening the Mixture
  1. Remove the pan from heat. Stir in the maple syrup or honey to taste, then add the chia seeds.
Thickening and Cooling
  1. Mix in the vanilla extract and lemon juice if you’re using them. Allow the mixture to sit for about 10 to 15 minutes.
Adjusting and Blending
  1. Taste the jam and adjust the sweetness or acidity as needed. If you prefer a smoother texture, blend briefly with an immersion blender or small food processor.
Storing
  1. Transfer the jam to a clean jar or airtight container. Refrigerate for up to 1 week.

Notes

For best flavor, consume within a week. Feel free to double the recipe and freeze half for later use. If jam isn’t thickening, let it rest longer. For flavor infusions, try adding cinnamon or other herbs.
