- In a mixing bowl, combine Greek yogurt, non-dairy milk or dairy milk, honey or maple syrup (if using), lemon zest, and vanilla extract. Whisk until thoroughly combined.
- Add chia seeds and a tiny pinch of sea salt to the mixture. Whisk again to ensure the seeds are evenly distributed.
- Cover the mixing bowl and refrigerate for at least one hour, or ideally overnight, to allow the chia seeds to swell.
- Once chilled and thickened, serve the pudding in bowls or jars and add your favorite toppings.
Notes
Store the pudding in an airtight container in the fridge for up to five days. Perfect for meal prepping! Don’t skip the chill time for best results.
