  • 2 slices slices watermelon Look for firm, ripe watermelon with a bright color. A seedless variety is preferable.
  • 3 slices pickles Use crunchy pickles, either spears or chips.
  • 1 slice Havarti cheese A creamy cheese that pairs well with watermelon.
  • 1 drizzle hot honey Provides sweetness and a little heat. Consider using 'Mike's Hot Honey'.
  • 1 drizzle balsamic glaze Adds depth of flavor; can be store-bought or homemade.
  • 3 leaves basil Fresh basil enhances the flavor.

Method
 

Preparation
  1. Slice two thin, rectangular pieces of watermelon to resemble bread slices, approximately ¾ inch thick.
  2. On one slice of watermelon, layer 3 slices of pickles followed by the Havarti cheese slice.
  3. Drizzle hot honey over the cheese, making sure it is evenly spread, then add a drizzle of balsamic glaze.
  4. Add 3 fresh basil leaves on top of the glaze.
  5. Top with the second slice of watermelon to form your sandwich.
  6. Admire your creation before enjoying it.

Notes

For best results, use room temperature cheese and ensure your watermelon is slightly firm. Store leftovers in an airtight container in the fridge and consume within a day.
