Method
Prepare the Fruit Mince Filling
- Combine all the ingredients for the fruit mince filling in a pot. Bring it to a gentle simmer over medium heat. Cover and let it simmer for about 45 minutes, stirring occasionally until it thickens and flavors meld. Let it cool.
Preheat Your Oven
- Preheat your oven to 160°C (350°F) and grease a 12-cup muffin tin plus 2 extra muffin cups.
Make the Pastry Dough
- In a large mixing bowl, combine 3 cups of oat flour, 1 egg, 3 tablespoons of melted coconut oil, and 2 tablespoons of honey/maple syrup. Mix until well combined. Gradually add 1/2 cup of cold water to form a soft dough.
Form the Crust
- Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Cut out circles to fit the muffin holes, pressing the dough firmly into each cavity. Stab the bottom of the dough lightly with a fork to prevent bubbling.
Fill with Fruit Mince
- Fill each crust with a generous tablespoon of fruit mince. Roll out any remaining dough to cut into decorative shapes and place them on top of the filled pies.
Bake
- Place the muffin tin in the preheated oven and bake for 30 minutes or until golden and fragrant. Allow them to cool in the tin for a few minutes before transferring to a wire rack.
Notes
Ensure the coconut oil is cooled before adding it to the mixture. For a more flavorful crust, you can add a pinch of salt and a dash of nutmeg.
