Ingredients

For the Tomato Mixture
  • 1.5 pounds ripe tomatoes (about 7 to 8 medium) Opt for heirloom varieties for unmatched flavor.
  • 2 cloves large garlic (1 to rub on bread, 1 minced in mixture) Consider mincing the garlic for deeper flavor.
  • 1/4 cup extra-virgin olive oil Choose high-quality cold-pressed for best taste.
  • 9-10 leaves fresh basil (thinly sliced) Use enough for flavor without overpowering.
  • 1/2 lemon juice (optional) Adds zest if desired.
  • 1 baguette grilled or toasty bread (about) Slice and toast until golden brown.
  • to taste Kosher salt and freshly ground black pepper, flaky salt (to serve) Adjust seasoning according to preference.

Method

Preparation
  1. Begin by coring and finely chopping the ripe tomatoes. Add them to a mixing bowl.
  2. Pour in the extra-virgin olive oil, and sprinkle in the Kosher salt and freshly ground black pepper. Incorporate the finely minced garlic, mixing everything well.
  3. Gently fold in the sliced basil. If desired, add a dash of lemon juice for added zest.
  4. Allow the mixture to marinate in the fridge for 20-30 minutes to let the flavors meld beautifully.
  5. While the tomatoes are marinating, slice the fresh baguette and toast it until golden brown, either on a grill or in an oven.
  6. Once toasted, take the second garlic clove and rub it over the warm bread for an aromatic kick.
  7. Top each slice with the seasoned tomato mixture, sprinkle with flaky salt, and serve.

Notes

For an elegant presentation, serve bruschetta on a wooden board garnished with fresh basil leaves. It pairs beautifully with salads or as an appetizer before pasta dishes. To make it healthier, consider adding chia or flaxseeds.
