  • 1 piece green onion (optional but recommended for flavor) Choose fresh green onions for the best flavor. You can substitute with chives if needed.
  • 1/4 cup oil (vegetable or canola, for frying) Using a high-smoke point oil is essential for achieving that crispy texture!
  • 1 large egg Allow your egg to come to room temperature for the fluffiest result.
  • 1/2 teaspoon fish sauce Feel free to use reduced-sodium fish sauce if you’re sensitive to sodium levels.
  • as needed serving steamed rice This adds heartiness to the meal; sticky rice is a popular option.
  • as needed serving Sriracha sauce or ketchup (for topping) Both options bring different flavor profiles: spicy or sweet!

Preparation
  1. Take one green onion and remove the root. Finely chop the green part and set aside.
  2. In a frying pan, heat ¼ cup of oil over medium-high heat.
  3. Crack the egg into a bowl and add the chopped green onion and ½ teaspoon of fish sauce. Beat the mixture until well combined and slightly frothy.
Cooking
  1. Pour the egg mixture into the center of the hot oil and fry for about 1 minute or until the edges begin to turn golden-brown.
  2. Gently use a spatula to flip the omelette and fry the other side for another minute or until golden.
  3. Remove the omelette from the pan and serve on a plate with a side of steamed rice. Drizzle with Sriracha sauce or ketchup.
