- Take one green onion and remove the root. Finely chop the green part and set aside.
- In a frying pan, heat ¼ cup of oil over medium-high heat.
- Crack the egg into a bowl and add the chopped green onion and ½ teaspoon of fish sauce. Beat the mixture until well combined and slightly frothy.
Cooking
- Pour the egg mixture into the center of the hot oil and fry for about 1 minute or until the edges begin to turn golden-brown.
- Gently use a spatula to flip the omelette and fry the other side for another minute or until golden.
- Remove the omelette from the pan and serve on a plate with a side of steamed rice. Drizzle with Sriracha sauce or ketchup.
