For the Thai Lime Tea
  • 2 Tbsp Thai tea leaves Look for good-quality loose leaf Thai tea for richer flavor.
  • 1 cup off-the-boil water Let the water cool slightly before pouring over the tea leaves.
  • 4-5 teaspoons sugar Adjust based on your sweetness preference.
  • 1/2 juicy lime Juice from half a juicy lime Freshly squeezed is key!
  • A lot of ice ice Don't skimp on the ice; it’s what makes this drink so refreshing.

Method
 

Making the Tea
  1. Pour the off-the-boil water over 2 Tbsp of Thai tea leaves in a pot or use a tea infuser. Let it steep for about 3-5 minutes.
  2. Strain the tea leaves to remove them using a cloth filter or a fine mesh sieve.
  3. While the tea is still warm, stir in 4-5 teaspoons of sugar until fully dissolved. Let the tea cool for a few minutes.
  4. Pack a glass with ice, squeeze the juice from half a lime directly over the ice, and pour the cooled tea mixture over it.
  5. Stir gently and enjoy!

Notes

If you have any leftovers, store the brewed tea in an airtight container in the fridge for up to 3 days. Try adding coconut milk or mint for variations.
