Making the Tea
- Pour the off-the-boil water over 2 Tbsp of Thai tea leaves in a pot or use a tea infuser. Let it steep for about 3-5 minutes.
- Strain the tea leaves to remove them using a cloth filter or a fine mesh sieve.
- While the tea is still warm, stir in 4-5 teaspoons of sugar until fully dissolved. Let the tea cool for a few minutes.
- Pack a glass with ice, squeeze the juice from half a lime directly over the ice, and pour the cooled tea mixture over it.
- Stir gently and enjoy!
Notes
If you have any leftovers, store the brewed tea in an airtight container in the fridge for up to 3 days. Try adding coconut milk or mint for variations.
