Ingredients
  

Liquid Base
  • 1.5 cups water (fresh and filtered for optimal taste)
  • 3/4 cup granulated sugar (or coconut sugar for a more authentic flavor)
  • 6 tablespoons vinegar (white vinegar or rice vinegar)
Vegetables
  • 6 shallots, peeled Adds a sweet, mild onion flavor
  • 1/2 cucumber cut into halves and then into 4 equal vertical sticks English cucumbers are perfect for their crunch and minimal seeds
  • 3 pieces peppers (1 red, 1 green, 1 yellow) Adjust the quantity based on your spice preference

Method
 

Preparation
  1. In a saucepan, heat 1.5 cups of water over medium heat until warm but not boiling.
  2. Add 3/4 cup of granulated sugar to the warm water and stir gently until completely dissolved (about 3-5 minutes).
  3. Pour in 6 tablespoons of vinegar, stir well, and remove from heat. Let the liquid cool completely.
  4. While the mixture cools, slice the shallots, cucumber, and peppers.
  5. In a mixing bowl, combine all sliced vegetables.
  6. Carefully pour the cooled liquid mixture over the vegetables and stir gently to coat.
  7. Refrigerate for at least 30 minutes to allow flavors to meld before serving.

Notes

For best flavor, let Ajaad sit overnight in the fridge. Keep in an airtight container for up to 7 days. You can swap in other vegetables for variation.
