Ingredients
  

For the soup
  • 1.5 lb chicken drumettes Preferably organic for best flavor.
  • 1.5 tablespoon fish sauce Use a good quality brand for better flavor.
  • 4 cups water
  • 300 g potatoes, peeled and cubed Yukon Golds are recommended for creaminess.
  • 0.5 onion cut into 1 cm strips
  • 4 cloves garlic, crushed
  • 0.5 teaspoon white pepper, ground
  • 1 tablespoon soy sauce
  • 0.25 teaspoon salt Adjust to taste.
  • 2 roma tomatoes, chopped
  • Chopped cilantro or green onions for garnish

Method
 

Preparation
  1. Marinate the chicken drumettes in fish sauce for 15 minutes.
  2. In a large pot, combine the water, onion, garlic, white pepper, and soy sauce. Bring to a boil.
Cooking
  1. Add the marinated chicken, reduce heat to a simmer, and cook for 15 minutes.
  2. Taste the broth and adjust the seasoning with salt if needed.
  3. Stir in the cubed potatoes, cover, and simmer for an additional 10 minutes until tender.
  4. Add the chopped tomatoes and simmer for another 5 minutes.
  5. Check seasoning again and stir in freshly chopped cilantro or green onions before serving.

Using fresh herbs and quality chicken will greatly enhance the flavor of your soup. Feel free to explore with substitutions such as carrots or bell peppers.
