Preparation
- Begin by layering the sliced onion and minced garlic in the bottom of your slow cooker.
- Gently place the whole chicken on top of the onion and garlic, breast-side up.
- Drizzle the olive oil over the chicken and massage it into the skin for added flavor.
- In a small bowl, mix the kosher salt, paprika, onion powder, and black pepper, then season the chicken generously.
- If your chicken comes with giblets, feel free to add them around the chicken.
Cooking
- Cover the slow cooker and set it to LOW. Cook for 7 to 8 hours, or until the meat pulls away easily from the bone and a meat thermometer in the inner thigh registers 165°F.
- Once done, discard the giblets and allow the chicken to rest for about 10 minutes before carving.
