  • 1 whole whole chicken (3 to 4 lb) Opt for organic or free-range for the highest quality meat.

  • 1 tbsp extra-virgin olive oil This helps crisp the skin while adding depth to flavor; feel free to swap with avocado oil for a neutral taste.
  • 2 1/4 to 3 tsp kosher salt Essential for flavor; adjust according to preference.
  • 1 tsp smoked or sweet paprika Adds warmth and a hint of smokiness.
  • 1 tsp onion powder Enhances the onion flavor—always a good idea!
  • 1/2 tsp freshly ground black pepper A must for a well-rounded seasoning.

Method
 

Preparation
  1. Begin by layering the sliced onion and minced garlic in the bottom of your slow cooker.
  2. Gently place the whole chicken on top of the onion and garlic, breast-side up.
  3. Drizzle the olive oil over the chicken and massage it into the skin for added flavor.
  4. In a small bowl, mix the kosher salt, paprika, onion powder, and black pepper, then season the chicken generously.
  5. If your chicken comes with giblets, feel free to add them around the chicken.
Cooking
  1. Cover the slow cooker and set it to LOW. Cook for 7 to 8 hours, or until the meat pulls away easily from the bone and a meat thermometer in the inner thigh registers 165°F.
  2. Once done, discard the giblets and allow the chicken to rest for about 10 minutes before carving.
