Preparation
- Ensure your cream cheese is softened to room temperature. Wash and dice the strawberries, setting aside about 1/4 cup for topping.
Mixing
- In a medium mixing bowl, beat the cream cheese with a hand mixer until it’s smooth and creamy, about 2 minutes.
- Add the whipped topping, strawberry gelatin, and vanilla extract to the bowl. Beat again until everything is well incorporated and fluffy, about another 2 minutes.
Finishing Touches
- Gently fold in the diced strawberries. Make sure not to overmix, as you want those juicy strawberry pieces to remain intact.
- Transfer the dip to a serving bowl, cover it, and chill in the refrigerator for at least 30 minutes to allow the flavors to develop beautifully.
- Just before serving, sprinkle the reserved strawberries on top. Serve the dip with pretzel crisps or graham crackers for a perfect pairing!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. The texture may become slightly softer, but it will still taste great. Prepare the dip a day ahead and keep it refrigerated for the best flavor.
