Preparation
  1. Ensure your cream cheese is softened to room temperature. Wash and dice the strawberries, setting aside about 1/4 cup for topping.
Mixing
  1. In a medium mixing bowl, beat the cream cheese with a hand mixer until it’s smooth and creamy, about 2 minutes.
  2. Add the whipped topping, strawberry gelatin, and vanilla extract to the bowl. Beat again until everything is well incorporated and fluffy, about another 2 minutes.
Finishing Touches
  1. Gently fold in the diced strawberries. Make sure not to overmix, as you want those juicy strawberry pieces to remain intact.
  2. Transfer the dip to a serving bowl, cover it, and chill in the refrigerator for at least 30 minutes to allow the flavors to develop beautifully.
  3. Just before serving, sprinkle the reserved strawberries on top. Serve the dip with pretzel crisps or graham crackers for a perfect pairing!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The texture may become slightly softer, but it will still taste great. Prepare the dip a day ahead and keep it refrigerated for the best flavor.
