Pastry Ingredients
  • 2 sheets frozen puff pastry, thawed Pepperidge Farm recommended for best results
  • 1 large egg, room temperature Enhances mousse texture
  • 2 teaspoons whole milk
Filling Ingredients
  • 3/4 cup strawberry preserves All-natural for the best flavor
  • 3 cups fresh strawberries, washed and sliced Feel free to use seasonal fruits
  • 1 recipe strawberry cheesecake mousse Easy version provided
  • 2 tablespoons confectioners' sugar For dusting

Method
 

Preparation
  1. Preheat your oven to 400 degrees F (200 degrees C). Line 2 large baking sheets with parchment paper.
  2. Lay one puff pastry sheet onto each lined baking sheet. Cut each sheet into 6 equal-sized rectangles for a total of 12, leaving 1/2 inch space between each.
  3. In a small bowl, whisk together the egg and milk. Brush the egg wash over the tops of the pastry rectangles.
Baking
  1. Place the pastry rectangles into the preheated oven and bake for 15-17 minutes, until golden brown.
  2. Allow the pastries to cool for 5-10 minutes on the baking sheet.
Assembly
  1. Once cooled, gently separate the top layer from the bottom layer of each pastry.
  2. Spread about 1 tablespoon of strawberry preserves on the bottom of each rectangle.
  3. Pipe about 2 tablespoons of strawberry cheesecake mousse on top, followed by 5-6 slices of fresh strawberries.
  4. Place the top of the pastry over the sliced strawberries and dust with confectioners' sugar.
Serving

Notes

For extra crunch, sprinkle crushed pistachios on top. Always use high-quality strawberries and preserves for the best flavor. Store leftovers in the refrigerator for up to 2 days.
