Preparation
  1. Slice the kaffir lime leaves and chilis before starting to make the cooking process easier.
Cooking
  1. Heat the oil in a wok over medium heat until it shimmers.
  2. Add the ground pork, cooking until golden brown, about 5-7 minutes.
  3. Stir in the Southern Thai curry paste and mix thoroughly, letting it cook for another 2-3 minutes.
  4. Add fish sauce and sugar, blending everything for a minute. Adjust to taste.
  5. Introduce the kaffir lime leaves and sliced chilis, stirring for another minute before removing from heat.
Serving
  1. Serve immediately. Garnish with fresh herbs if desired.
