Preparation
- Pour Tajin seasoning onto a small plate. Rub a lime wedge around the rim of two lowball glasses and dip the rims into Tajin to coat.
Mixing
- Fill a cocktail shaker with ice. Add pineapple juice, tequila, lime juice, simple syrup, and 5 to 6 sliced jalapeños. Shake vigorously for about 15 seconds until chilled.
Serving
- Fill prepared glasses with crushed ice. Strain cocktail mixture over crushed ice in each glass.
- Garnish with additional slices of jalapeño and fresh pineapple wedges. Serve immediately.
Notes
Avoid shaking too long to prevent dilution. Use the freshest ingredients for best flavor, and consider making the mixture ahead of time.
