Ingredients

  • 1 tablespoon Tajin seasoning Adds a lovely flavor to the rim. Substitute with chili powder if needed.
  • 1 wedge lime Fresh lime is essential; bottle lime juice won’t cut it.
For the Cocktail
  • 6 ounces fresh pineapple juice Use 100% juice for the best flavor.
  • 4 ounces tequila Opt for a good-quality blanco or reposado tequila.
  • 2 ounces freshly squeezed lime juice Fresh is always better for taste.
  • 1 ounce simple syrup Easy to make—combine equal parts sugar and water until dissolved.
  • 1 medium jalapeño, sliced Adjust amount for heat preference; remove seeds for milder flavor.
  • to garnish pineapple wedges Adds a lovely tropical touch and looks beautiful.
  • ice ice Fill the shaker generously; drink is best served ice-cold.

Method
 

Preparation
  1. Pour Tajin seasoning onto a small plate. Rub a lime wedge around the rim of two lowball glasses and dip the rims into Tajin to coat.
Mixing
  1. Fill a cocktail shaker with ice. Add pineapple juice, tequila, lime juice, simple syrup, and 5 to 6 sliced jalapeños. Shake vigorously for about 15 seconds until chilled.
Serving
  1. Fill prepared glasses with crushed ice. Strain cocktail mixture over crushed ice in each glass.
  2. Garnish with additional slices of jalapeño and fresh pineapple wedges. Serve immediately.

Notes

Avoid shaking too long to prevent dilution. Use the freshest ingredients for best flavor, and consider making the mixture ahead of time.
