Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).

  3. In another bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Add the egg, lemon juice, lemon zest, and vanilla extract to the butter mixture, mixing well until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough and place them onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden but the centers remain soft.
  2. For the glaze, whisk together the powdered sugar and lemon juice until smooth.
  3. Drizzle over the cooled cookies.
