  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized pieces for tenderness and flavor
  • 2 medium zucchinis, sliced into half-moons try to choose firm, vibrant zucchinis
  • 1 cup cherry tomatoes, halved look for plump, juicy ones
  • ½ red onion thinly sliced sweet varieties like Vidalia work well
  • 2 cloves garlic, minced fresh garlic gives the best flavor
Seasoning & Oil
  • 2 tablespoons olive oil extra virgin for the best taste
  • 1 teaspoon dried oregano you can use fresh if available
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika adds an appealing depth of flavor
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Cheese

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil to prevent sticking.
Seasoning the Chicken & Vegetables
  1. In a large bowl, toss together the chicken pieces, zucchini, cherry tomatoes, red onion, and minced garlic.
  2. Drizzle with olive oil and sprinkle with oregano, basil, paprika, salt, black pepper, and red pepper flakes (if using).
  3. Mix well until all pieces are coated with the flavorful marinade.
Assembling the Bake
  1. Spread the seasoning-coated mixture evenly in the prepared baking dish for even cooking.
  2. Sprinkle the mozzarella and Parmesan cheeses generously on top.
Cooking
  1. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  2. After that, remove the foil to allow the cheese to brown nicely.
  3. Bake for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C), and the cheese is golden brown and bubbly.
Serving
  1. Garnish with freshly chopped parsley and serve while warm.
  2. This dish pairs beautifully with fluffy rice, quinoa, or a rustic loaf of crusty bread to soak up the flavors.
