Ingredients
  

Base Ingredients
  • 1 cup soft pitted dates, packed and chopped Soak in warm water if firm.
  • 1 cup rolled oats
  • 1/2 cup creamy nut or seed butter (almond, peanut, or tahini)
  • 2-3 tablespoons honey or maple syrup To taste.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
Additional Ingredients
  • 2 tablespoons ground flaxseeds Best if ground fresh.
  • 2 tablespoons pumpkin seeds, lightly chopped
  • 2 tablespoons sunflower seeds
  • 2 tablespoons sesame seeds
  • Optional unsweetened shredded coconut 2 tablespoons.
  • Optional cacao nibs 1 tablespoon.
  • Optional mini chocolate chips 1 tablespoon.
  • Optional cinnamon A pinch.

Method
 

Preparation
  1. Soften your dates by soaking them in warm water for 5 minutes if they feel firm, then drain well.
  2. In a food processor, pulse the dates, nut or seed butter, honey or maple syrup, vanilla, and salt until sticky and smooth.
  3. Add the oats and pulse a few times until the mixture looks thick and starts to clump.
  4. Fold in the ground flax, pumpkin, sunflower, and sesame seeds. Pulse or stir until evenly distributed, adjusting consistency with warm water or oats as needed.
  5. Scoop tablespoon portions and roll them into balls, dampening your palms lightly if the dough sticks.
  6. Chill for 20 minutes to set, then store in an airtight container in the fridge for up to 1 week or freeze for 2-3 months.

Notes

Double the batch and freeze half for convenient snacks. Customize your energy bites with various flavors such as mocha, chai, lemon coconut, trail mix, or chocolate fix.
