Method
Cooking the Pasta
- In a large pot of well-salted boiling water, add 250 grams of your long pasta. Cook according to package instructions until al dente.
Preparing the Sauce
- While your pasta is cooking, grab the roasted garlic and mash it in a bowl using a fork or a garlic press.
- Mix in 3 tablespoons of olive oil, 1/2 teaspoon sea salt, 1/2 teaspoon black pepper, 1/4 teaspoon chili flakes, and lemon zest into the bowl.
- Reserve about 120 ml of the pasta cooking water before straining the pasta.
- Add the reserved pasta water to the garlic mixture and whisk until it forms a thick, glossy sauce.
Combining and Serving
- Drain the pasta and stir the garlic sauce into the warm pasta, mixing well until every strand is coated.
- Dish it up immediately for the best flavor experience.
Notes
Store leftovers in an airtight container for up to 3 days. You can also roast garlic a day ahead and store it in the fridge.
