Ingredients
  

Pasta and Sauce Base
  • 250 grams long pasta (spaghetti or linguine) Choose high-quality pasta for best results.
  • 2 heads roasted garlic Organic garlic recommended for flavor.
  • 3 tablespoons olive oil Extra virgin preferred.
  • 1/2 teaspoon sea salt For seasoning.
  • 1/2 teaspoon black pepper Freshly cracked for best flavor.
  • 1/4 teaspoon chili flakes Optional, for a kick.
  • 1 teaspoon lemon zest To brighten the dish.
  • 120 ml pasta water Reserve before draining pasta.

Method
 

Cooking the Pasta
  1. In a large pot of well-salted boiling water, add 250 grams of your long pasta. Cook according to package instructions until al dente.
Preparing the Sauce
  1. While your pasta is cooking, grab the roasted garlic and mash it in a bowl using a fork or a garlic press.
  2. Mix in 3 tablespoons of olive oil, 1/2 teaspoon sea salt, 1/2 teaspoon black pepper, 1/4 teaspoon chili flakes, and lemon zest into the bowl.
  3. Reserve about 120 ml of the pasta cooking water before straining the pasta.
  4. Add the reserved pasta water to the garlic mixture and whisk until it forms a thick, glossy sauce.
Combining and Serving
  1. Drain the pasta and stir the garlic sauce into the warm pasta, mixing well until every strand is coated.
  2. Dish it up immediately for the best flavor experience.

Notes

Store leftovers in an airtight container for up to 3 days. You can also roast garlic a day ahead and store it in the fridge.
