Ingredients

Salad Ingredients
  • 1/2 medium red cabbage (approximately 300 grams) Look for firm, tight heads with crisp leaves.
  • 1 large orange (peeled and thinly sliced) Choose juicy oranges for the best results; navel oranges work great!
  • 1/4 cup pomegranate seeds Fresh seeds are preferable, but frozen can work if you can’t find the fresh variety.
Dressing Ingredients
  • 50 ml juice of 1 orange Fresh-squeezed juice is always best!
  • 2 tablespoons olive oil Extra virgin olive oil is the go-to for its rich flavor.
  • 1/2 teaspoon Dijon mustard A touch of this enhances flavors; feel free to switch to a whole grain mustard if preferred.
  • 1/2 teaspoon maple syrup or honey (to taste) Adjust according to your sweetness preference.
  • 1/2 teaspoon sea salt You can use kosher salt as an alternative.
  • 1/4 teaspoon black pepper Freshly cracked is best for that aromatic kick.

Method

Preparation
  1. Begin by finely slicing the red cabbage.
  2. You can use a sharp knife, a mandoline, or a food processor for convenience.
  3. Aim for thin, delicate shreds that will make the salad light and easy to eat.
Mix Your Dressing
  1. In a large bowl, combine the juice of one orange, olive oil, Dijon mustard, maple syrup or honey, sea salt, and black pepper.
  2. Whisk them together until well blended.
Massage the Cabbage
  1. Add the finely sliced cabbage into the bowl.
  2. With clean hands, mix the cabbage into the dressing, massaging it for about a minute.
  3. This tenderizes the cabbage and ensures it’s infused with the dressing's flavor.
Add Sweetness
  1. Gently fold in the orange slices and pomegranate seeds.
  2. The salad should look vibrant and appealing.
Final Touches
  1. Serve the salad immediately for a fresh experience.
  2. If preparing ahead of time, store in a sealed container in the refrigerator for up to five days.

Notes

Don't skip the massaging step, and feel free to customize with other fruits or nuts.
