  • 1/4 teaspoon baking soda This helps provide a nice rise.

  • 1/2 cup unsalted butter, melted Ensure it's at room temperature for a smooth mixture.
For the Filling
  • 3/4 cup raspberry jam Homemade jam works wonders; otherwise, use high-quality store-bought jam.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line an 8 by 8-inch baking dish with parchment paper.
  3. In a medium bowl, combine the flour, oats, brown sugar, baking soda, and salt. Stir well until blended.
  4. Pour the melted butter over the dry mixture. Stir until you achieve a crumbly texture.
  5. Press about 2/3 of the crumble mixture into the bottom of your lined baking dish.
  6. Carefully spread the raspberry jam over the crust.
  7. Sprinkle the remaining crumble mixture over the jam.
Baking
  1. Place your dish in the preheated oven and let the bars bake for 30 to 35 minutes, until the top is golden brown.
  2. Once baked, remove from the oven and allow to cool in the pan on a wire rack.
  3. After completely cool, lift the bars out of the dish, slice them to your desired size, and serve.

Notes

Keep these bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They freeze beautifully for up to 3 months.
