  • 300 grams cooked quinoa, room temperature or cold Enhances texture
  • 50 grams hardy greens, finely chopped Kale or spinach recommended
  • 10 grams fresh parsley, finely chopped Fresher is better
  • 30 grams chickpea flour For binding; gluten-free option
  • 3 large eggs The ultimate binder
  • 1/2 medium onion, finely chopped Approx. 70 grams; don’t skip
  • 2 cloves garlic, minced Garlic enhances flavor
  • 1 unit lemon, zest Fresh zest elevates flavor
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil Plus more for cooking
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Dijon mustard Adds depth of flavor
  • 1/4 teaspoon hot pepper flakes Optional for a subtle kick

Method
 

Preparation
  1. In a large mixing bowl, add the quinoa, greens, parsley, chickpea flour, eggs, onion, garlic, lemon zest and juice, olive oil, salt, pepper, mustard, and optional hot pepper flakes. Mix thoroughly.
  2. Heat a large frying pan over medium heat with a thin layer of olive oil.
  3. Scoop about 2 tablespoons of quinoa mixture into the pan and shape into patties.
Cooking
  1. Cook for 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes.
Serving
  1. Keep cooked patties warm in a preheated oven until ready to serve.

Notes

Don’t skip cooling the quinoa for better texture. You can make the mixture ahead and store in the fridge. These patties store well and can be frozen.
