Ingredients
  

For the crust
  • 1 cup creamy or crunchy peanut butter Choose a good quality peanut butter, Jif or Skippy recommended.
  • 1 cup granulated sugar Sweetens the crust perfectly.
  • 1 large egg, room temperature Binds everything together.
For the filling
  • 3 packages (8 ounces each) cream cheese, softened Opt for Philadelphia cream cheese for creamy texture.
  • 3/4 cup granulated sugar Balances the cream cheese beautifully.
  • 2 cups heavy whipping cream Gives the filling a light and airy texture.
  • 1 package (1.7 ounces) banana cream instant pudding mix Adds robust banana flavor.
  • 2 medium bananas, sliced Use ripe but firm bananas.
For Garnish
  • 1 banana, sliced for garnish
  • Whipped cream, for garnish Store-bought or homemade.
  • Peanuts, chopped for garnish Adds a crunchy texture.
  • 1/4 cup creamy peanut butter, melted For drizzling on top before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, stir together the peanut butter, 1 cup of sugar, and egg until well combined.
  3. Press the mixture evenly into a deep-dish 9-inch pie pan.
  4. Bake for 13-14 minutes, or until slightly crisp. Allow crust to cool completely.
Making the Filling
  1. In a large bowl, beat together softened cream cheese and 3/4 cup sugar until smooth.
  2. In another bowl, whisk together heavy cream and pudding mix until slightly thickened.
  3. Combine the pudding mixture with cream cheese mixture and beat until smooth.
Assembly and Chilling
  1. Layer banana slices in a single layer on top of the cooled crust.
  2. Spoon the filling on top of the banana slices and smooth it into an even layer.
  3. Cover and refrigerate for at least one hour.
  4. Before serving, top with sliced bananas, whipped cream, and chopped peanuts. Drizzle with melted peanut butter.

Notes

Allow cream cheese to soften for easier mixing. Store leftovers in the refrigerator for up to 3 days.
