Peach Delight

A delightful no-bake dessert featuring layers of creamy cheesecake filling, crunchy graham cracker crust, and luscious peach jello.

Ingredients
  

For the Crust
  • 2 cups finely crushed honey graham crackers Look for the ready-to-use variety. Can substitute with digestive biscuits.
  • 1 tablespoon granulated sugar To sweeten the crust slightly.
  • 1/2 cup unsalted butter, melted Use high-quality brands for the best flavor.
For the Cream Cheese Layer
  • 2 blocks cream cheese, room temperature Make sure it’s soft for smooth mixing.
  • 1 cup confectioners' sugar Gives the filling its sweet flavor.
  • 2 teaspoons vanilla extract For a lovely, aromatic hint.
  • 3 cups whipped topping, divided Cool Whip preferred, but homemade works too.
For the Jello Layer
  • 1 box peach jello mix The star ingredient.
  • 1 can sliced peaches in fruit juice, drained and diced, divided Fresh peaches can also be used.

Method
 

Preparation
  1. Line an 8×8-inch baking dish with parchment paper.
  2. In a medium bowl, mix the crushed graham crackers and sugar.
  3. Add melted butter and stir until every crumb is moistened.
  4. Press the crumb mixture into the bottom of the lined dish.
Cream Cheese Layer
  1. In a large bowl, beat the cream cheese, confectioners' sugar, and vanilla until creamy (about 2-3 minutes).
  2. Fold in 2 cups of whipped topping until well combined.
  3. Divide the cream cheese mixture into two bowls.
  4. In one bowl, add 1/4 cup of peach jello mix and mix well.
  5. Fold in 1 cup of diced peaches into the bowl with peach jello mix.
Layering
  1. Spread the peach mixture over the crust, then spread the remaining cream cheese mixture, and top with the remaining whipped topping.
Chill and Serve
  1. Refrigerate for 1 hour or overnight for best results.
  2. Before serving, top with reserved diced peaches.

Notes

Be sure to use high-quality ingredients. This dessert can be made ahead of time for best flavor results.
