Preparation
- Line an 8×8-inch baking dish with parchment paper.
- In a medium bowl, mix the crushed graham crackers and sugar.
- Add melted butter and stir until every crumb is moistened.
- Press the crumb mixture into the bottom of the lined dish.
Cream Cheese Layer
- In a large bowl, beat the cream cheese, confectioners' sugar, and vanilla until creamy (about 2-3 minutes).
- Fold in 2 cups of whipped topping until well combined.
- Divide the cream cheese mixture into two bowls.
- In one bowl, add 1/4 cup of peach jello mix and mix well.
- Fold in 1 cup of diced peaches into the bowl with peach jello mix.
Layering
- Spread the peach mixture over the crust, then spread the remaining cream cheese mixture, and top with the remaining whipped topping.
Chill and Serve
- Refrigerate for 1 hour or overnight for best results.
- Before serving, top with reserved diced peaches.
