Ingredients
  

For the Tea
  • 5-6 pieces pandan leaves Use fresh if possible for an aromatic punch.
  • 2 stalks lemongrass Make sure they’re fresh and fragrant.
  • 1.5 L water High-quality filtered water is key.
  • to taste sugar or simple syrup Adjust based on your sweet tooth.
For the Jelly
  • 6 pieces pandan leaves Fresh is best for that beautiful green color.
  • 1.5 cups water Use this for blending the pandan.
  • 1.5 tsp agar-agar powder A great vegetarian substitute for gelatin.
  • 3-4 tablespoons sugar Adjust according to desired sweetness.

Method
 

To Make the Tea
  1. Boil 1.5 liters of water in a pot over high heat.
  2. Tie the pandan leaves into knots and add them to the pot.
  3. Bruise the lemongrass stalks and cut them into 1-inch pieces, then toss into the pot.
  4. Simmer for about 15-20 minutes until the water turns light green and fragrant.
  5. Sweeten the tea to taste with sugar, stirring gradually.
  6. Strain the tea into a pitcher and chill in the refrigerator.
To Make the Jelly
  1. Blend 6 pandan leaves with 1.5 cups of water until fine.
  2. Strain the mixture into a pot, keeping the liquid for cooking.
  3. Add 1.5 tsp of agar-agar powder to the pandan juice and stir.
  4. Heat the mixture over high heat, stirring continuously until it boils.
  5. Mix in the sugar and pour the mixture into a mold to cool and set.
  6. Cut the set jelly into small cubes and add to the chilled tea.
Serve
  1. Pour the iced tea over ice and add more syrup if desired. Enjoy!

Notes

Use fresh ingredients for the best flavor. Store the iced tea for up to 3 days and jelly for about a week.
