Preparation
- Preheat your broiler to 500°F and place the oven rack 4-6 inches from the heating element.
- In a small bowl, mix together the brown sugar, paprika, garlic powder, kosher salt, black pepper, and cayenne (if using) until evenly combined.
- Drizzle the olive oil over the pork chops and rub it in. Generously sprinkle the seasoning mixture on both sides of the chops, pressing it in to ensure it sticks.
Cooking
- Broil the pork chops for about 3 minutes, then rotate the pan to ensure even cooking. Broil for an additional 3 minutes.
- Check the internal temperature; it should register around 140-145°F. If lower, flip the chops and broil for another 1-2 minutes.
- Allow the pork chops to rest for 5 minutes before serving.
Notes
Bring pork chops to room temperature for about 30 minutes before cooking for even cooking. Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
