  • 4 pieces Pork Chops (¾-1 inch thick, boneless or bone-in) Look for chops with a nice marbling of fat for added flavor and moisture. I recommend organic or pasture-raised for top quality.
  • 2 tbsp Brown Sugar This adds a touch of sweetness to balance out the savory flavors. Dark brown sugar can be used for a more robust flavor.
  • 2 tsp Paprika Opt for smoked paprika to enhance the dish's flavor.
  • 2 tsp Garlic Powder Fresh minced garlic can work too; however, dry garlic powder provides ease of use.
  • 1.5 tsp Kosher Salt Essential for seasoning; kosher salt is less salty than table salt.
  • 0.5 tsp Black Pepper Freshly cracked is best for maximum flavor.
  • 0.5 tsp Cayenne Pepper (optional) Adjust according to your spice tolerance.
  • 2 tbsp Olive Oil Use extra virgin for added flavor and health benefits.

Method
 

Preparation
  1. Preheat your broiler to 500°F and place the oven rack 4-6 inches from the heating element.
  2. In a small bowl, mix together the brown sugar, paprika, garlic powder, kosher salt, black pepper, and cayenne (if using) until evenly combined.
  3. Drizzle the olive oil over the pork chops and rub it in. Generously sprinkle the seasoning mixture on both sides of the chops, pressing it in to ensure it sticks.
Cooking
  1. Broil the pork chops for about 3 minutes, then rotate the pan to ensure even cooking. Broil for an additional 3 minutes.
  2. Check the internal temperature; it should register around 140-145°F. If lower, flip the chops and broil for another 1-2 minutes.
  3. Allow the pork chops to rest for 5 minutes before serving.

Notes

Bring pork chops to room temperature for about 30 minutes before cooking for even cooking. Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
