  • 1 can 15 ounces mandarin oranges, drained, divided Using canned ensures sweetness; fresh fruit can be used.

Preparation
  1. In a medium mixing bowl, beat the cream cheese with a hand mixer until smooth and creamy, about 2-3 minutes.
  2. Fold in the whipped topping, orange gelatin, and vanilla extract. Beat until well combined and fluffy, about another 2 minutes.
  3. Dice most of the mandarin oranges (reserve about 1/4 cup for garnish) and gently fold them into the cream cheese mixture.
  4. Transfer the dip to a serving bowl and chill in the refrigerator for at least 30 minutes.
  5. Once chilled, top with the reserved mandarin oranges and serve alongside shortbread cookies, graham crackers, vanilla wafers, or pretzels.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing as it alters the texture of the dip.
