Method
Mixing the Dough
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, and kosher salt until well combined.
- In a stand mixer, beat the softened butter with granulated sugar and orange zest until light and fluffy.
- Add the egg, ricotta cheese, and vanilla extract, and beat until smooth.
- Gradually add the dry mixture to the wet mixture, mixing until just combined.
- Gently fold in the chocolate chips with a spatula until evenly distributed.
- Cover the bowl with plastic wrap and chill the dough in the fridge for 1-2 hours.
Baking the Cookies
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Using a tablespoon, scoop dough onto the prepared sheets, leaving space between each.
- Bake for 13-14 minutes, until edges are slightly golden.
- Allow to cool on baking sheets for 5 minutes before transferring to a wire rack.
Making the Glaze
- Whisk together confectioners' sugar and orange juice until smooth and drizzle over cooled cookies.
Notes
