Method
 

Mixing the Dough
  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, and kosher salt until well combined.
  2. In a stand mixer, beat the softened butter with granulated sugar and orange zest until light and fluffy.
  3. Add the egg, ricotta cheese, and vanilla extract, and beat until smooth.
  4. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  5. Gently fold in the chocolate chips with a spatula until evenly distributed.
  6. Cover the bowl with plastic wrap and chill the dough in the fridge for 1-2 hours.
Baking the Cookies
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Using a tablespoon, scoop dough onto the prepared sheets, leaving space between each.
  3. Bake for 13-14 minutes, until edges are slightly golden.
  4. Allow to cool on baking sheets for 5 minutes before transferring to a wire rack.
Making the Glaze
  1. Whisk together confectioners' sugar and orange juice until smooth and drizzle over cooled cookies.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, refrigerate them.
