Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs Use Honey Maid Graham Crackers for perfect sweetness.
  • 0.5 cups unsalted butter, melted Melted but not too hot to avoid cooking the cream cheese.
For the filling
  • 8 ounces cream cheese, room temperature Ensure it's soft for easy mixing.
  • 1 can sweetened condensed milk Eagle Brand is preferred for consistency.
  • 0.5 cups key lime juice Freshly squeezed is best.
For garnish
  • pieces fresh key lime slices Add for a zesty touch.
  • cups whipped cream Homemade or store-bought.

Method
 

Preparation
  1. In a small bowl, combine the graham cracker crumbs and melted butter. Stir until evenly coated.
  2. Press the mixture evenly into the bottom and up the sides of a 9-inch pie pan.
  3. In a large bowl, beat the cream cheese with a hand mixer until smooth.
  4. Gradually add the sweetened condensed milk and key lime juice, mixing until well combined.
  5. Pour the filling over the prepared crust, spreading it evenly.
Chilling
  1. Refrigerate until set, about 1 hour (or up to overnight if prepping for a special occasion).
Finishing Touch
  1. Before serving, garnish with fresh key lime slices and a generous dollop of whipped cream.
