  • 4 pieces boneless, skinless chicken breasts Preferably organic or free-range for the best taste.
  • 1 packet Caesar salad dressing mix Look for brands that use simple ingredients.
  • 0.5 cup grated Parmesan cheese Freshly grated will yield the best flavor.
  • 0.5 cup mayonnaise Use a good quality mayonnaise, such as Hellmann’s or Duke’s.
  • 0.25 cup sour cream Can substitute with Greek yogurt for a lighter version.
  • 1 tbsp Dijon mustard Go for a whole grain variety for more texture.
  • 1 tbsp lemon juice Freshly squeezed is ideal.
  • 1 tbsp olive oil Extra virgin gives the best flavor.
  • 1 tsp garlic powder Fresh minced garlic can be used instead.
  • 0.5 tsp black pepper Freshly ground is preferable.
  • 0.25 tsp salt Adjust to taste.
  • 0.5 cup panko breadcrumbs Use plain or seasoned for crunch.

Method
 

Preparation
  1. In a mixing bowl, combine the Caesar dressing mix, grated Parmesan cheese, mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, black pepper, and salt. Mix until smooth.
  2. Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about ½ inch.
Cooking
  1. Dip each chicken breast into the dressing mixture, ensuring they are thoroughly coated. Let any excess drip off.
  2. Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes on each side until golden brown.
  3. Preheat your oven to 400°F (200°C) while the chicken cooks.
  4. Transfer the chicken to a baking dish. Top with panko breadcrumbs, pressing gently to adhere.
  5. Bake for 10–12 minutes or until the top is golden and the chicken is cooked through, reaching an internal temperature of 165°F (75°C).
  6. Let the chicken rest for 5 minutes before garnishing with fresh parsley and serving hot.

Notes

For added flavor, marinate your chicken in the dressing mixture for a couple of hours before cooking. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
