Preparation
- In a mixing bowl, combine the Caesar dressing mix, grated Parmesan cheese, mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, black pepper, and salt. Mix until smooth.
- Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about ½ inch.
Cooking
- Dip each chicken breast into the dressing mixture, ensuring they are thoroughly coated. Let any excess drip off.
- Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes on each side until golden brown.
- Preheat your oven to 400°F (200°C) while the chicken cooks.
- Transfer the chicken to a baking dish. Top with panko breadcrumbs, pressing gently to adhere.
- Bake for 10–12 minutes or until the top is golden and the chicken is cooked through, reaching an internal temperature of 165°F (75°C).
- Let the chicken rest for 5 minutes before garnishing with fresh parsley and serving hot.
Notes
For added flavor, marinate your chicken in the dressing mixture for a couple of hours before cooking. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
