Ingredients
  

For the base
  • 1 cup unsalted butter Room temperature is best for easier mixing.
  • 1 ¼ cups light brown sugar Packed firmly for best sweetness.
  • ½ cup granulated sugar Adjust to taste.
  • 2 large eggs Room temperature for even mixing.
  • 1 teaspoon pure vanilla extract Use high-quality vanilla.
  • 2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1 cup old-fashioned oats Adds a lovely chewy texture.
  • 1 teaspoon kosher salt Enhances flavor.
  • ½ teaspoon baking soda Helps with rising.
  • ¼ teaspoon ground cinnamon Adds warmth.
For the chocolate
  • 1 cup white chocolate chips Optional for creaminess.
  • 1 cup semi-sweet chocolate chips Classic choice.

Method
 

Preparation
  1. Melt the butter in a medium saucepan over medium-low heat until it turns chestnut brown, stirring frequently (about 5-7 minutes).
  2. Add the brown sugar and granulated sugar, stirring until smooth, about 2-3 minutes, then let it chill in the refrigerator for 10 minutes.
  3. Preheat your oven to 325°F (about 162°C) and prepare a 9×13-inch baking dish with nonstick spray.
Mixing the Batter
  1. Transfer the brown butter mixture to a large mixing bowl, stir in the eggs and vanilla extract until well combined.
  2. Mix in the flour, oats, salt, baking soda, and cinnamon using a spatula until just combined.
  3. Fold in most of the chocolate chips, saving some for the topping.
Baking
  1. Transfer the dough to the prepared pan, pressing evenly into the corners. Sprinkle the reserved chocolate chips on top.
  2. Bake for 35-40 minutes, or until the edges are golden brown. Allow to cool for 15-20 minutes before cutting.

Notes

Store in an airtight container at room temperature for up to one week or refrigerate for two weeks. These bars can be frozen for up to a month.
