  • 10.6 ounces of ground pork 80% lean recommended for juiciness.
  • 1/2 tablespoon soy sauce Opt for low-sodium if needed.
  • 1 pinch sugar Balances flavors.

Method
 

Preparation
  1. Finely pound the cilantro roots in a mortar with a pestle for 2-3 minutes until very fine.
  2. Add the white peppercorns to the mortar and continue to pound until well-blended.
  3. Incorporate the peeled garlic and pound until the mixture resembles a smooth paste.
  4. Transfer the mixture to a mixing bowl and add the ground pork, soy sauce, and sugar.
  5. Mix thoroughly by hand, ensuring all ingredients are well combined. Let the mixture sit for at least 10 minutes to absorb the marinade.

Notes

For the best flavor, marinate for at least 30 minutes, or up to overnight in the fridge. Store leftovers in an airtight container in the refrigerator for up to 2 days, or freeze for up to 3 months. Defrost overnight before cooking.
