  1. Begin by cutting your bacon into bite-sized pieces, chopping the garlic finely, and trimming your long beans to one-inch lengths.
Cooking
  1. Place your wok over medium heat. Once it’s hot, add the bacon pieces, frying them until they start to turn golden brown and release their fat, about 5 minutes.
  2. Once the bacon is nearly done cooking, toss in the finely chopped garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.
  3. Add the long beans and stir-fry for about 2 minutes until they become vibrantly green and tender-crisp.
  4. Drizzle in the soy sauce and toss everything together, letting the beans absorb the flavors for another minute before removing from heat.
  5. Serve as a standalone delight or pair with rice or quinoa.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can reheat gently in a pan to retain the beans’ crunchy texture. For a vegetarian option, swap out the bacon for smoked tofu or tempeh.
