- Begin by cutting your bacon into bite-sized pieces, chopping the garlic finely, and trimming your long beans to one-inch lengths.
Cooking
- Place your wok over medium heat. Once it’s hot, add the bacon pieces, frying them until they start to turn golden brown and release their fat, about 5 minutes.
- Once the bacon is nearly done cooking, toss in the finely chopped garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.
- Add the long beans and stir-fry for about 2 minutes until they become vibrantly green and tender-crisp.
- Drizzle in the soy sauce and toss everything together, letting the beans absorb the flavors for another minute before removing from heat.
- Serve as a standalone delight or pair with rice or quinoa.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. You can reheat gently in a pan to retain the beans’ crunchy texture. For a vegetarian option, swap out the bacon for smoked tofu or tempeh.
