- In a mixing bowl, add the cream cheese, butter, lemon juice, and lemon zest. Mix on medium speed for about 2 minutes until well incorporated.
- Scrape down the sides of the bowl, then measure out 5 cups of powdered sugar.
- Start the mixer on the lowest setting to combine the powdered sugar with the creamed mixture for about 30 seconds.
- Once incorporated, increase the speed to medium-high for an additional 30-45 seconds to achieve a light and fluffy texture.
- Taste the frosting to check if it needs more zest or a tiny drop of yellow food coloring for color.
- Refrigerate the frosting for at least an hour to help it set before using.
Notes
Re-whip slightly chilled frosting with a hand mixer if the texture needs restoration. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
