  • 1/2 cup Butter (Slightly Softened; use Salted Sweet Cream Butter) Choose high-quality salted butter for the best flavor.
  • 8 oz Cream Cheese (Slightly Softened) Always use full-fat cream cheese for a creamy texture.
  • 1/4 cup Fresh Lemon Juice (from 1 large lemon) Fresh juice enhances flavor.
  • 1 heaping tablespoon Lemon Zest (also from the large lemon) Provides essential oils that amplify lemon flavor.
  • 5 cups Powdered Sugar Sift if clumpy.

Preparation
  1. In a mixing bowl, add the cream cheese, butter, lemon juice, and lemon zest. Mix on medium speed for about 2 minutes until well incorporated.
  2. Scrape down the sides of the bowl, then measure out 5 cups of powdered sugar.
  3. Start the mixer on the lowest setting to combine the powdered sugar with the creamed mixture for about 30 seconds.
  4. Once incorporated, increase the speed to medium-high for an additional 30-45 seconds to achieve a light and fluffy texture.
  5. Taste the frosting to check if it needs more zest or a tiny drop of yellow food coloring for color.
  6. Refrigerate the frosting for at least an hour to help it set before using.

Notes

Re-whip slightly chilled frosting with a hand mixer if the texture needs restoration. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
