  • 0.5 cups chia seeds Look for high-quality, organic chia seeds.
  • 1 pinch sea salt Enhances flavors beautifully.

Method
 

Preparation
  1. In a mixing bowl or large jar, whisk together coconut milk, lemon juice, lemon zest, maple syrup or honey, vanilla extract, and sea salt until smooth (about 2-3 minutes).
  2. Stir in chia seeds thoroughly, mixing well to avoid clumping.
  3. Let the mixture sit for about 5 minutes, then stir again to help chia seeds expand.
  4. Cover and place the bowl or jar in the refrigerator to chill for at least 3 hours, or ideally overnight.
  5. Before serving, stir the pudding again to evenly distribute chia seeds. Spoon into jars or bowls and add toppings as desired.

Notes

Store in an airtight container in the fridge for up to 5 days. This pudding is great for meal prep!
