Ingredients
  

For the Chicken
  • 4 pieces boneless skinless chicken breasts (or thighs) Choose organic or free-range for best flavor.
  • 1/4 cup honey Go for pure, quality honey.
  • 1/2 cup BBQ sauce Use your favorite brand or make a homemade version.
  • 1 tbsp olive oil Extra virgin for a richer flavor.
  • to taste pinch salt and pepper Freshly cracked black pepper elevates flavor.
For the Potatoes
  • 2 lbs Yukon Gold potatoes, diced evenly Their creamy texture is perfect for this dish.
  • 2 tbsp butter Use room temperature for easy melting.
  • 4 cloves garlic, minced Fresh garlic delivers the best flavor!
  • 1/2 cup heavy cream This gives the sauce its rich, luscious texture.
  • 1 cup freshly grated Parmesan cheese Always better when freshly grated.
  • to taste tbsp fresh parsley, chopped (for garnish) Adds that pop of color and freshness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with foil for easy cleanup.
  2. In a mixing bowl, combine honey, BBQ sauce, olive oil, and a pinch of salt and pepper. Stir until well combined.
Cooking the Chicken
  1. Place the chicken breasts on the prepared baking sheet and generously coat them in the honey BBQ glaze.
  2. Bake for 25–30 minutes. Broil for the last 2-3 minutes until the chicken edges are golden and crispy.
Cooking the Potatoes
  1. Bring a pot of salted water to a boil. Add the diced Yukon Gold potatoes and boil until fork-tender, about 10-12 minutes. Drain thoroughly.
  2. In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
  3. Stir in heavy cream followed by freshly grated Parmesan cheese, and let it simmer until smooth.
Assembly
  1. Gently toss cooked potatoes into the sauce, stirring to coat thoroughly. Season with salt and pepper to taste.
  2. On each plate, arrange a serving of garlic Parmesan potatoes, top with sliced honey BBQ chicken, and garnish with chopped parsley.

Notes

For best results, let the butter sit at room temperature before cooking. Fresh herbs can be a great addition as well.
