Ingredients
  

For the Chicken
  • 4 pieces boneless skinless chicken breasts Aim for free-range or organic for enhanced taste.
  • 1 tbsp extra virgin olive oil Use high-quality, cold-pressed olive oil.
  • 1 tsp Italian seasoning A blend of dried basil, oregano, and thyme.
  • ½ tsp garlic powder Fresh garlic is preferable for robustness.
  • Salt and freshly ground black pepper To taste.
For the Sauce
  • 3 cloves garlic, minced Will elevate the dish with aroma.
  • 1 small yellow onion, thinly sliced Adds sweetness to the sauce.
  • 2 cups grape or cherry tomatoes Heirloom varieties enhance flavor.
  • ½ cup chicken broth Opt for low-sodium varieties.
  • ¼ cup fresh basil, chopped Plus more for garnish.
  • 1 tsp granulated sugar Enhances natural sweetness.
  • ¼ cup freshly grated Parmesan cheese Adds creaminess to the dish.

Method
 

Preparation
  1. In a small bowl, mix the Italian seasoning, garlic powder, salt, and pepper. Rub this blend evenly over both sides of the chicken breasts.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for about 2 minutes on each side until golden brown. Remove and set aside.
  2. Lower the heat to medium and add the minced garlic and sliced onion to the skillet. Sauté for 1–2 minutes until fragrant.
  3. Add the grape tomatoes and chicken broth to the skillet. Simmer for about 5 minutes.
  4. Stir in the chopped basil and sugar, then return the chicken breasts to the skillet. Let everything simmer for an additional 5–8 minutes until the chicken is fully cooked.
Garnishing
  1. Top your healthy chicken dish with additional fresh basil and sprinkle with freshly grated Parmesan cheese before serving.

Notes

Use a meat thermometer for perfectly cooked chicken. Leftovers can be stored in an airtight container for up to 3 days. This dish also freezes well.
