Preparation
- Preheat your oven to 350°F (180°C).
- Line a baking sheet with parchment paper.
- In a large bowl, whisk together the oat flour, rolled oats, cinnamon, baking soda, and salt.
- Fold in the finely grated carrots and chocolate chips.
- Pour in the melted coconut oil, honey, and egg. Mix well until fully combined.
- Using a small ice cream scoop or a heaped tablespoon, form the mixture into cookies and arrange them on the baking sheet.
Baking
- Bake for 20-22 minutes or until the cookies are light golden brown.
- Allow the cookies to cool on the baking sheet before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week. You can freeze the dough for up to 3 months.
