  • 1 cup oat flour You can make your own by blending rolled oats in a food processor.
  • 1 teaspoon cinnamon Try using Ceylon cinnamon for a milder, sweeter flavor.
  • 0.5 teaspoon nutmeg Freshly grated is best!
  • 1 egg Room temperature for better mixing.
  • 0.25 cup melted coconut oil Can substitute with melted butter if preferred.
  • 0.25 cup honey or maple syrup Adjust the sweetness based on preference.
  • 0.5 teaspoon baking soda Leavening agent.
  • a pinch sea salt Brings out the flavors.

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together the oat flour, rolled oats, cinnamon, baking soda, and salt.
  4. Fold in the finely grated carrots and chocolate chips.
  5. Pour in the melted coconut oil, honey, and egg. Mix well until fully combined.
  6. Using a small ice cream scoop or a heaped tablespoon, form the mixture into cookies and arrange them on the baking sheet.
Baking
  1. Bake for 20-22 minutes or until the cookies are light golden brown.
  2. Allow the cookies to cool on the baking sheet before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week. You can freeze the dough for up to 3 months.
