Preparation
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, whisk together the eggs, cottage cheese, Dijon mustard, salt, and pepper until well combined.
- Heat a drizzle of olive oil in a 10-12 inch oven-proof skillet over medium heat.
- Add the onion and cook for about 2 minutes, until softened and translucent.
- Stir in the chopped broccolini and cook for another 5 minutes, until just tender.
- Add the ham and give everything a good stir until evenly mixed.
Cooking and Baking
- Pour the egg mixture over the broccolini and ham, spreading it out evenly.
- Sprinkle the cheddar cheese on top.
- Transfer the skillet to the oven and bake for 15 minutes, or until the eggs are set and the top is golden.
- Remove from the oven and let the frittata cool for a few minutes before slicing.
Notes
Store leftover frittata in an airtight container in the refrigerator for up to three days. It can be served cold or gently reheated.
