Ingredients
  

Frittata Base
  • 6 large large eggs Ideally organic or free-range
  • 3/4 cup cottage cheese Use 2% or full-fat for creaminess
  • 2 teaspoons Dijon mustard Adds depth and flavor
  • Salt and black pepper to taste Salt and black pepper Season to taste
Vegetable and Protein Mix
  • 2 teaspoons olive oil Extra virgin for best flavor
  • 1 medium brown onion, diced Can substitute with yellow onion
  • 2 bunches broccolini, cut into 2 cm pieces Can substitute with spinach or kale
  • 150 g sliced ham, roughly chopped Use high-quality, nitrate-free ham
Cheese Topping
  • 1 cup grated low-fat cheddar cheese Sharp cheddar gives fantastic flavor

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the eggs, cottage cheese, Dijon mustard, salt, and pepper until well combined.
  3. Heat a drizzle of olive oil in a 10-12 inch oven-proof skillet over medium heat.
  4. Add the onion and cook for about 2 minutes, until softened and translucent.
  5. Stir in the chopped broccolini and cook for another 5 minutes, until just tender.
  6. Add the ham and give everything a good stir until evenly mixed.
Cooking and Baking
  1. Pour the egg mixture over the broccolini and ham, spreading it out evenly.
  2. Sprinkle the cheddar cheese on top.
  3. Transfer the skillet to the oven and bake for 15 minutes, or until the eggs are set and the top is golden.
  4. Remove from the oven and let the frittata cool for a few minutes before slicing.

Notes

Store leftover frittata in an airtight container in the refrigerator for up to three days. It can be served cold or gently reheated.
