  • 3 tablespoons unsalted butter, room temperature For easy melting
  • 14 ounces sweetened condensed milk, 1 can
  • 2 tablespoons molasses For depth of flavor
  • 10 ounces miniature marshmallows, 1 bag Or use 4 cups of mini marshmallows
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon kosher salt
  • 6 cups crispy rice cereal (174 g)

Method
 

Preparation
  1. Preheat your oven and spray an 8x8 inch baking dish with nonstick cooking spray and set aside.
  2. In a large pot over medium heat, melt the butter until bubbly, about 2-3 minutes.
  3. Add the sweetened condensed milk and molasses, stirring well to combine. Bring the mixture to a gentle simmer, stirring constantly to prevent scorching.
  4. Once simmering, add in the marshmallows and continue to stir frequently until completely melted and smooth, about 4-5 minutes.
  5. Remove the pot from heat and immediately stir in the spices: cinnamon, ginger, cloves, nutmeg, and kosher salt until fully incorporated.
  6. Gently fold in the crispy rice cereal using a rubber spatula until everything is evenly coated.
  7. Transfer the mixture into the prepared baking dish and press down firmly until you achieve an even layer. Let cool completely at room temperature (about 30 minutes) before cutting into squares and serving.

Notes

For softer squares, don’t press down too hard when spreading the mixture. Leftover treats can be stored in an airtight container at room temperature for about 3-5 days, or frozen for up to 1 month. They taste better if made a day in advance.
