  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces Thighs can be used for more flavor
  • 1 tsp salt Use kosher salt for the best results
  • 1/2 tsp black pepper
  • 2 tbsp olive oil Extra virgin for added flavor
  • 2 tbsp unsalted butter Make sure it's at room temperature for easy melting
  • 8 oz mushrooms, sliced Cremini or button mushrooms work beautifully
  • 4 cloves garlic, minced Fresh is key!
  • 1 tsp dried thyme Or use fresh thyme if you have it for an even brighter flavor
  • 1/2 tsp crushed red pepper flakes Optional, for heat
  • 2 tbsp chopped fresh parsley Optional, for garnish

Method
 

Preparation
  1. Start by seasoning the bite-sized chicken pieces with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add the seasoned chicken bites and cook for 5-6 minutes, stirring occasionally until they turn golden brown and are fully cooked (internal temperature should reach 165°F).
  4. Carefully remove the chicken from the skillet and set aside.
Cooking
  1. In the same skillet, melt the unsalted butter over medium heat.
  2. Add the sliced mushrooms and sauté for 4-5 minutes until golden and browned.
  3. Stir in the minced garlic, dried thyme, and crushed red pepper flakes; cook for another 1-2 minutes until fragrant.
  4. Return the cooked chicken to the skillet, stirring to toss with the mushroom mixture. Heat through for an additional 1-2 minutes.
  5. Garnish with freshly chopped parsley if desired, and serve immediately while hot.

Notes

Storage: Store in an airtight container in the fridge for up to 3 days. These chicken bites freeze beautifully, allow cooling before packaging in a freezer-safe container for up to 3 months.
