Preparation
- Start by seasoning the bite-sized chicken pieces with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat.
- Add the seasoned chicken bites and cook for 5-6 minutes, stirring occasionally until they turn golden brown and are fully cooked (internal temperature should reach 165°F).
- Carefully remove the chicken from the skillet and set aside.
Cooking
- In the same skillet, melt the unsalted butter over medium heat.
- Add the sliced mushrooms and sauté for 4-5 minutes until golden and browned.
- Stir in the minced garlic, dried thyme, and crushed red pepper flakes; cook for another 1-2 minutes until fragrant.
- Return the cooked chicken to the skillet, stirring to toss with the mushroom mixture. Heat through for an additional 1-2 minutes.
- Garnish with freshly chopped parsley if desired, and serve immediately while hot.
