Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large mixing bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt until well combined.
- In a smaller bowl, whisk together the eggs and vegetable oil until thoroughly mixed.
- Slowly add the egg-oil mixture to the dry ingredients, stirring until just combined.
- Gently fold in the diced strawberries and sliced rhubarb.
Baking
- Pour the batter into the greased baking dish and bake for 55-60 minutes.
Finishing Touches
- While the cake bakes, combine the milk, melted butter, and sugar in a small saucepan over medium heat until dissolved.
- After removing the cake from the oven, poke 25-30 holes across the top and drizzle the milk mixture over it.
- Let the cake soak and cool completely before serving.
- Dust with confectioners' sugar just before serving.
