  • 1 cup granulated sugar Reduce if strawberries are sweet.
  • 5 teaspoons baking powder For rising the cake.
  • 1 teaspoon kosher salt Enhances flavor.
Wet Ingredients
  • 6 large eggs, room temperature Use flaxseed substitute if needed.
  • 1 cup vegetable oil Melted coconut oil is an alternative.
  • 1 cup whole milk Almond or soy milk for dairy-free.
  • 1/4 cup unsalted butter, melted Room temperature for smoother texture.
Fruits
  • 1 pound strawberries, washed and diced Fresh and organic are better.
  • 1 pound rhubarb, washed and sliced Frozen can be used if not in season.
Toppings
  • 1/4 cup granulated sugar (for topping) For crunch and sweetness.
  • to taste confectioners' sugar (for garnish) For a beautiful finish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large mixing bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt until well combined.
  3. In a smaller bowl, whisk together the eggs and vegetable oil until thoroughly mixed.
  4. Slowly add the egg-oil mixture to the dry ingredients, stirring until just combined.
  5. Gently fold in the diced strawberries and sliced rhubarb.
Baking
  1. Pour the batter into the greased baking dish and bake for 55-60 minutes.
Finishing Touches
  1. While the cake bakes, combine the milk, melted butter, and sugar in a small saucepan over medium heat until dissolved.
  2. After removing the cake from the oven, poke 25-30 holes across the top and drizzle the milk mixture over it.
  3. Let the cake soak and cool completely before serving.
  4. Dust with confectioners' sugar just before serving.
