  • 1 to 2 tablespoons chopped Thai chilies Adjust for heat preference
  • 3 tablespoons fish sauce Use a high-quality brand, made from anchovies.
  • 0.5 to 1 tablespoons lime juice Freshly squeezed is best.
  • 2 cloves garlic Thinly sliced or chopped, optional but recommended.
  • 2 tablespoons thinly sliced shallots Optional, adds sweetness.

Preparation
  1. Chop the chilies: Finely chop your Thai chilies, using gloves to avoid irritation.
  2. Combine ingredients: In a small bowl, combine all ingredients - the chilies, fish sauce, lime juice, and garlic and shallots if using.
  3. Let it infuse: Allow the mixture to sit for at least 10 minutes to let the flavors meld beautifully.
  4. Taste and adjust: Sample the condiment and feel free to add more lime juice or chilies according to your preference.
  5. Store: Transfer the condiment into an airtight container. It can be stored in the fridge for up to two weeks.

Notes

Let the mixture sit to enhance flavors. Store in the fridge for freshness or freeze for up to three months.
