  • 2 teaspoons honey or maple syrup Honey provides a sweeter, more floral note.
  • 1 teaspoon Dijon or German mustard Adds a nice kick and balances the sweetness.
  • 1/2 teaspoon sea salt Adjust to taste, fine sea salt blends beautifully.
  • 1/2 teaspoon black pepper Freshly cracked for the best flavor.

Preparation
  1. Preheat your oven to 220 degrees C (430 degrees F).
  2. Line a large baking sheet with parchment paper.
  3. Quarter the red cabbage, remove the tough white core, and finely chop into bite-sized pieces.
  4. In a mixing bowl, combine the olive oil, balsamic vinegar, honey, mustard, salt, and pepper with the chopped cabbage. Massage the cabbage with your hands to soak in the flavors.
  5. Spread the cabbage mixture onto the prepared baking sheet in a single layer.
Cooking
  1. Roast in the preheated oven for about 10 minutes, until the edges are browned and the cabbage is tender yet a little crunchy.
Serving

Notes
