Preparation
- In a large bowl, combine the rolled oats, your choice of nuts, seeds, dried fruit, raw cacao nibs (if using), cinnamon, and a pinch of sea salt. Use your hands to mix them thoroughly.
- In a separate small bowl, whisk together the nut butter, maple syrup, water, and vanilla extract until the mixture is slightly clumpy but well combined (about 1 minute).
- Pour the wet mixture over the dry ingredients. Use your hands to mix everything together, ensuring the oats and nuts are evenly coated.
- Gently fold in the coconut flakes until evenly distributed.
Chilling
- Transfer the mixture into a baking dish lined with parchment paper and press it down firmly.
- Refrigerate for about 30 minutes to firm up.
Serving
- Once set, cut them into your desired shape (squares, bars, or clusters) and enjoy!
- Store leftovers in zip-lock bags in the fridge for up to two weeks, or freeze for longer storage—up to three months.
