  • 1 pinch sugar Enhances the flavor of the other ingredients.
Coating
  • olive oil Choose a good-quality extra virgin olive oil for best results.

Method

Preparation
  1. Place the garlic in a mortar and pound until fine with a pestle. Add cilantro root and continue to pound until combined. Add white peppercorns, pound until fine, and set aside.
  2. In a large bowl, combine ground pork with the pounded herb mixture, soy sauce, and a pinch of sugar using your hands. Mix until all ingredients are well incorporated.
Assembly
  1. Take a wonton wrapper and place about a tablespoon of the meat mixture in the center. Fold over to create a triangle, using water to seal the edges. Fold the sides to the center and press to secure. Repeat until you have about 40 wontons.
  2. Using a cooking brush, coat each wonton with olive oil to prevent sticking. Brush the other side.
Cooking
  1. Lay wontons flat in the air fryer basket. Set air fryer to 356°F (180°C) and fry for 20 minutes, or until golden brown and crispy.
  2. Serve hot with your favorite dipping sauce.

Notes

For storage, keep in an airtight container in the fridge for up to 2 days. Reheat in the air fryer. You can freeze prepared wontons and cook them from frozen, adding a couple of minutes to the cooking time.
