Preparation
- Place the garlic in a mortar and pound until fine with a pestle. Add cilantro root and continue to pound until combined. Add white peppercorns, pound until fine, and set aside.
- In a large bowl, combine ground pork with the pounded herb mixture, soy sauce, and a pinch of sugar using your hands. Mix until all ingredients are well incorporated.
Assembly
- Take a wonton wrapper and place about a tablespoon of the meat mixture in the center. Fold over to create a triangle, using water to seal the edges. Fold the sides to the center and press to secure. Repeat until you have about 40 wontons.
- Using a cooking brush, coat each wonton with olive oil to prevent sticking. Brush the other side.
Cooking
- Lay wontons flat in the air fryer basket. Set air fryer to 356°F (180°C) and fry for 20 minutes, or until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
Notes
For storage, keep in an airtight container in the fridge for up to 2 days. Reheat in the air fryer. You can freeze prepared wontons and cook them from frozen, adding a couple of minutes to the cooking time.
