  • 4 pieces boneless chicken breasts Look for organic or free-range for optimal flavor.
  • 1 cup heavy cream Or substitute with half-and-half for a lighter version.
  • 1/2 cup chicken broth Homemade is ideal, but store-bought works too; check for low sodium options.
  • 1/2 cup sun-dried tomatoes, chopped Oil-packed adds more flavor, but dry tomatoes can also work if soaked.
  • 2 cups fresh spinach Feel free to add more for extra nutrients.
  • 2 cloves garlic, minced Fresh is best, but garlic powder can be used in a pinch.
  • 1 tbsp olive oil Opt for extra virgin for a richer taste.
  • 1/4 cup Parmesan cheese, grated For the best flavor, shred your own instead of using pre-grated.
  • 1 tsp Italian seasoning You can make your own blend or choose a high-quality brand.
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped For garnish; fresh herbs elevate any dish.

Method
 

Preparation
  1. Generously season both sides of the chicken breasts with salt, pepper, and Italian seasoning, and let them rest for a few minutes.
  2. In a large skillet, heat the olive oil over medium heat, add the seasoned chicken and cook for about 5-6 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set it aside.
Cooking
  1. In the same skillet, sauté the minced garlic until fragrant, about 1 minute.
  2. Stir in the chopped sun-dried tomatoes and cook for an additional 2 minutes.
  3. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet and simmer for about 2 minutes.
  4. Lower the heat slightly, then stir in the heavy cream, letting it simmer for 3-4 minutes until it thickens slightly.
  5. Add the fresh spinach and cook until wilted, about 1-2 minutes.
  6. Place the cooked chicken back into the skillet, spooning the sauce over the top, and let it simmer for an additional 2 minutes.
  7. Sprinkle the grated Parmesan cheese over the chicken and cover the skillet briefly to allow the cheese to melt.
  8. Garnish with fresh parsley and serve hot.

Notes

Make sure to check the doneness of your chicken with a meat thermometer. If the sauce is too thick, add a splash more broth or cream until desired consistency is achieved. Consider finishing with a squeeze of fresh lemon juice just before serving!
