Preparation
- Generously season both sides of the chicken breasts with salt, pepper, and Italian seasoning, and let them rest for a few minutes.
- In a large skillet, heat the olive oil over medium heat, add the seasoned chicken and cook for about 5-6 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set it aside.
Cooking
- In the same skillet, sauté the minced garlic until fragrant, about 1 minute.
- Stir in the chopped sun-dried tomatoes and cook for an additional 2 minutes.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet and simmer for about 2 minutes.
- Lower the heat slightly, then stir in the heavy cream, letting it simmer for 3-4 minutes until it thickens slightly.
- Add the fresh spinach and cook until wilted, about 1-2 minutes.
- Place the cooked chicken back into the skillet, spooning the sauce over the top, and let it simmer for an additional 2 minutes.
- Sprinkle the grated Parmesan cheese over the chicken and cover the skillet briefly to allow the cheese to melt.
- Garnish with fresh parsley and serve hot.
Notes
Make sure to check the doneness of your chicken with a meat thermometer. If the sauce is too thick, add a splash more broth or cream until desired consistency is achieved. Consider finishing with a squeeze of fresh lemon juice just before serving!
