Main Ingredients
  • 6 pieces boneless, skinless chicken thighs Look for high-quality, preferably organic, free-range thighs.
  • 2 tbsp unsalted butter Use at room temperature for easy melting.
  • 1 tsp Salute seasoning Or use any poultry seasoning of choice.
  • to taste Salt & pepper I always recommend sea salt and freshly cracked pepper.
  • 4 cloves garlic, finely chopped Fresh garlic is essential for the sauce.
  • 2 tbsp all-purpose flour Use gluten-free flour if needed.
  • 1 cup chicken broth Homemade is ideal, but low sodium store-bought works too.
  • 1 cup heavy whipping cream Light cream can be used but won't be as rich.
  • ½ cup freshly grated Parmesan cheese Opt for the fresh stuff for best melting.
  • to taste Fresh dill, chopped For garnish; parsley or thyme can also be used.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with the Salute seasoning, salt, and pepper on both sides.
  3. Melt 2 tbsp of butter in an oven-safe skillet over medium heat.
  4. Sear the chicken thighs for 2–3 minutes on each side until golden brown. Remove and set aside.
  5. In the same skillet, melt another 2 tbsp of butter.
  6. Add the chopped garlic and sauté for 1 minute, stirring constantly.
  7. Stir in the flour, cooking and stirring for about 1 minute.
  8. Slowly pour in the chicken broth while stirring until it begins to thicken.
  9. Add the heavy cream, stirring well to combine.
  10. Mix in the Parmesan cheese; continue stirring until it melts.
  11. Return the seared chicken to the skillet, spooning the sauce over each piece.
  12. Transfer the skillet to the oven and bake uncovered for 30-35 minutes.
  13. Garnish with fresh dill and extra cheese before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop or microwave.
