Preparation
- Generously sprinkle salt and pepper on both sides of the pork chops.
- In a large, heavy-bottomed cast iron skillet, heat the olive oil over medium-high heat until shimmering.
Cooking
- Add the pork chops and cook for 5-7 minutes on each side until they are golden brown and cooked through to an internal temperature of 145°F.
- Remove the pork chops from the skillet and set aside on a plate to rest.
- In the same skillet, add the whole garlic cloves and sauté for 1-2 minutes until fragrant and golden.
- Pour in the heavy cream, stirring to combine, and bring to a gentle simmer.
- Place the pork chops back into the skillet, bathing them in the creamy sauce, and cook for an additional 5 minutes.
Serving
- Garnish with freshly chopped parsley before serving.
Notes
For a nutritional upgrade, consider adding sautéed spinach or kale, or serving with quinoa or brown rice. Vegan option: Substitute with grilled portobello mushrooms and coconut cream.
