Ingredients

Core Ingredients
  • 1 pound chicken, ground turkey, or lentils Choose organic or grass-fed meats for best flavor.
  • 3 cups seasonal vegetables (carrots, potatoes, spinach, broccoli, mushrooms) Fresh is best, but frozen can work in a pinch.
  • 1 cup grains (rice, quinoa, or pasta) These serve as the base of the casserole.
  • 2 cups sauce (stock, cream of soup, or marinara) Choose your preferred flavor or homemade versions.
  • 1 cup cheese (cheddar, mozzarella, or gouda) Artisan varieties are recommended for depth of flavor.
  • 1 cup toppings (breadcrumbs, herbs, or crushed crackers) Add for crunch.

Method

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, sauté chopped onions and garlic until fragrant. Add your chosen proteins and vegetables, cooking until tender.
  3. In a separate bowl, mix your grains, broth, and any additional seasonings. Combine with the sautéed mixture in a large casserole dish and gently fold to combine.
  4. Top with cheese and your chosen crunchy topping.
Baking
  1. Bake the casserole in the preheated oven for 30-45 minutes, checking halfway through to ensure the edges aren't burning; cover with foil if necessary.
  2. Let the casserole cool slightly before serving.

Notes

Casseroles can be made ahead and stored in the fridge or frozen for later. Allow to cool before storing, and reheat in the oven. Consider pairing with a fresh salad or garlic bread.
